Back in 2016 I was tired all the time, and it was due to my love for toast. When I quit eating grains I got my energy back but I really missed bread, that king of comfort foods.
When I discovered cassava (the starchy root vegetable tapioca is made from), I started playing around in the kitchen and came up with this recipe.
These days I can digest other grains without getting sleepy, but I still love cassava for its yummy flavor, texture and durability for tacos (among other things)!
I hope you experience as much joy as I do from having access to these magical tortillas.

Ingredients: Cassava*, psyllium fiber*, acacia fiber*, arrowroot*, pink himalayan salt, soluble tapioca fiber*
*Organic ingredients (yay!)

How to make the magic
Produces ~9 tortillas per batch (5 batches per bag)
- Heat a pan on medium-low (no oil in pan needed!)
- Get a large mixing bowl
- Add 1 level cup of this mix
- Add 2 Tbsp. avo/olive oil
- Add ~3/4+ cup water
- Mix by hand forming one big ball. If it feels dry at all, add some more water!
- Create small balls for each tortilla (~golf ball sized)
- Arrange parchment/wax paper on a tortilla press If you don’t have a press, use two books!
- Press, peel carefully, drop on pan (easy now!)
- Cook a few minutes each side till transparency disappears
